Baked Pork Chops

I never really think of Baked Pork Chops as a dish I want to cook in the summer. But the other day, it was super hot, and all I wanted to do was sit outside in the backyard and watch my son play in the sprinkler.

I needed to come up with something I could throw together in about ten minutes, so I could go outside and have fun. The answer, my Baked Pork Chop Recipe.

Dinner was in the oven, while I was getting a tan! Can it get any better than that!

Let me show you how to cook pork chops.....

Ingredients

1 Pork Loin Chop for every person you are serving

1-3 cloves chopped Garlic

Salt and Pepper

Fresh or Dried Rosemary

1 can whole Tomatoes, or a couple of fresh (optional) (*If you have leftover whole Tomatoes. Remove from can. Put in plastic container. Freeze and use another time.)

2-3 Onions peeled and cut in half

1 Medium Potato for every person you are serving

Olive Oil

Method

Place Pork Chops in baking pan. Add chopped garlic.



Sprinkle Salt and Pepper, then Rosemary. Add Tomatoes over every Chop.



Add Onions and Potatoes around the Pork Chops.

Drizzle Olive Oil over everything.

Bake at 425 Degrees for 1 1/2 hours. Each half-hour, turn Potatoes and Onions. Do not turn over the chops.



Note: This dish keeps well in the freezer. I recommend you make twice what you need, and keep the other half for a dinner during the week.



Don't forget to finish with a salad.
