Fried Zucchini and Eggs

If you have heard about Fried Zucchini and Eggs, then we are probably related! I don't think I know anyone that is a non-relative that has heard of this dish.

Zucchini is so plentiful in the summer. They are everywhere in the stores, and if you are growing zucchini, you probably have too much! That's the beauty of it!

If you want to know how to cook zucchini and make it a full meal, this recipe may be what you are looking for.

It's delicious and is great for a fast dinner. Have some beautiful French or Italian bread to serve with it.

Ingredients

Olive Oil

1 clove garlic chopped Click here to learn how to buy and prepare fresh garlic.

Zucchini - (the smaller the better)

Eggs - Beat/Mix until smooth (3-4 for each Zucchini)

Salt and Pepper to taste

Hot Pepper Flakes (Optional)


Method

Chop the garlic and set aside.

While you are doing this, put a couple of tablespoons in a frying pan and heat with a low to medium heat. If you use a plain stainless steel pan, you may want to add a touch more oil.


Wash Zucchini and cut off both ends.

Slice into bit sized pieces.


Add the garlic to the warmed pan and saute.


Almost immediately, add the chopped zucchini.

Add the salt and pepper to taste.

And if you like hot pepper, this is where you add it!

Saute until the Zucchini is a little soft. Don't let it get mushy.


Add the beaten eggs to the pan. Mix everything together.


After the eggs are cooked, remove the Zucchini and Eggs and put in a plate to serve.
