Frittata Recipe

I love having a big breakfast. My frittata recipe sustains me for hours. I'm sure it's the eggs. And there are many ways to cook eggs.

Let me show you how to cook eggs my way. I hope you like it.

By the way, I like this dish really hot. I like to add a lot of red pepper flakes. And the onion and peppers also give it a kick. Don't let me scare you, all of that is optional.

Actually, almost everything is optional. Sometimes, I only have one other vegetable in the house. And the frittata still tastes good.

Ingredients

Red Pepper

Onion

1-2 Potatoes

Olive Oil

Salt and Pepper to taste

Hot Pepper Flakes (optional)

2-3 Eggs (whisked)

Serves 1 to 2 people.Stainless Steel Frying Pan Must Be Used - do not use teflon.


Method

Prepare the pepper.

Wash the inside and outside.

In the picture I have shown you the inside of the pepper with it's seeds. As an aside, I like to save them, and use them to plant pepper plants.

Cut pieces of the pepper into small strips. I don't use a lot of pepper. I think of it as adding color to the dish. Perhaps I use 1/5 of the pepper.

Then prepare the onion. I use 1/2 of a small to medium onion. Cut that into small strips.

Peel the potatoes, then cut into small bits.



Place the frying pan on your stove top. Add olive oil. Put the heat on medium low.

After a couple of minutes, add the potatoes.

Add the salt and pepper to taste, and the red pepper flakes if you choose.

Keep turning the potatoes so they cook evenly.



When the potatoes are almost fully cooked, add the pepper and onions.

Saute everything.

Turn on your oven Broiler. Let it heat up.



After the pepper and onions appear cooked. Spread everything evenly in the pan.

Then add the eggs.

Let cook on the stove top for a couple of minutes.

Then put under your broiler to cook.

Check the pan every few minutes, until you see that it is cooked to your liking.

Be careful when you remove the pan from the broiler. Don't forget to use a pot-holder so you don't burn your hands.

You have almost completed my Frittata Recipe!



You can cut the frittata like a pie and serve.
