Green Bean Recipe

The other day I had dinner at my parents house. My mother put together this Green Bean Recipe in no time. I never think of cooking beans, much less fried green beans. But of course, my mother's Italian Green Beans is a keeper.

And I thought it was important to share it with you.

Ingredients

Fresh Green Beans

Olive Oil

2-3 cloves chopped garlic Click here to learn how to buy and prepare fresh garlic.

Salt and Pepper to taste


Method

Snap the ends off each bean.



Rinse and clean the beans completely.



Place cleaned beans in a good size pan with water.

Boil the beans.

When you can put a fork into a bean easily, they are done.

Do not over cook. You want the beans to remain firm.



After you boil the beans, remove from stove quickly and drain away the hot water.

Put the beans in a strainer, and run under cold water.

You are stopping the beans from cooking. Make sure they are cool.

Set aside, and add olive oil to your frying pan.

The amount of oil you use is dependent on the type of pan you use. I like a little more oil when I use a stainless steel pan. This is up to you.

Heat the oil, then add the garlic, salt and pepper.

Add the beans - and saute.



Keep turning the beans over until they are all cooked.

Remove from pan. Place in dish. And Serve!
