I just made a Zucchini Frittata. It is such a great dish, I had to share it with you right away.

Just follow the directions for Zucchini and Eggs: http://www.eat-well-save-money-recipes.com/Fried-Zucchini.html

Then after you pour the beaten eggs over the zucchini, don't scramble them. Just put the pan under your broiler and follow the end of these instructions: http://www.eat-well-save-money-recipes.com/Frittata-Recipe.html

You do need to cook them first. Don't cook them so much that the corn is soft and mushy, but make sure the corn turns a bright yellow.
