Pasta Fagioli Recipe

It took a while for me to create this Pasta Fagioli Recipe. My Pasta Fagioli is a combination of my mother's input and other techniques.

After testing it many times, I know this Pasta Fagioli Soup Recipe is created to give you all the levels this wonderful dish can inspire.

Also known as Pasta e Fagioli or Pasta and Beans, I hope you try this dish. It's worth it!

Note: I always make Pasta Fagioli a few days after I make my Tomato Sauce. I just freeze 1 cup of the sauce, knowing that I will want to use it in my Pasta Fagioli Recipe. Makes it easy.

Another Note: You will normally buy Ground Beef and Sausage in 1 pound packages. Just remove the half that you need, and freeze the rest for another time.

To make the Chicken Stock, just save the backs and any bony pieces when you buy a whole Chicken and have it cut into pieces. Don’t use them for baking, just put them into a freezer bag (after they soaked in salt water) to use another time. When you get a chance, boil the Chicken backs in water. Then take the stock, put it into a large plastic container, and freeze it, until you need it.

Ingredients

˝ Pound Ground Beef

˝ Pound Sausage (Sweet)

2-3 Cloves Garlic, finely chopped

1 Onion, finely chopped

2 Celery Stalks, finely chopped

1 Carrot, finely chopped

1 can (6 oz) Tomato Paste (and/or 1 cup tomato sauce - optional)

6-7 Cups Chicken Stock – or water and chicken bouillons

1 Can (15 oz) Red Kidney Beans, drained

1 Can (15 oz) White Cannellini Beans, drained

1 Cup Pasta, small shapes

Salt and Pepper to taste

Hot Peppers or Pepper Flakes (Optional)

Olive Oil if needed



Method

Brown Ground Beef on low heat.



Take Sausage out of it’s casing and mix with Ground Beef.



Break into small pieces, and brown. Remove all Meat from the pan, leaving the drippings in the pan.



Add the chopped Garlic, Onion, Celery and Carrot to drippings in pan. If there is not enough drippings, add a touch of Olive Oil.



Sauté for about 5 minutes, until everything is soft.



Add Tomato Paste or 1 cup of Tomato Sauce.



Slowly add Chicken stock.Let everything cook for 20 minutes.



Return Beef and Sausage to kettle. Let cook. Add both types of Beans and Salt and Pepper to taste.

Let cook for 15-20 minutes.

By now, everything should be boiling. Add the Pasta.

Cook until Pasta is soft.



Let sit for a while, it will thicken. Serve.
