Beans and Greens

I told a friend of mine about Beans and Greens about 15 years ago. At that time her kids were 6 and 7 years old. A few years ago, she told me that she served this to her family every week, ever since I showed her how to make it. This is so delicious; it can almost be the only thing you serve! Definitely makes a great side dish.

Ingredients

Garlic

Onion

Olive Oil

1 Bunch Escarole washed well

1 can Cannellini Beans - drained

Salt and Pepper

Method


Sauté garlic and onion with olive oil in a frying pan.



After about 5 minutes, add the escarole.



After the escarole softens, add the cannelloni beans.



Stir everything together.Add salt and pepper to taste. Turn off burner, so you don’t cook the beans.

And it’s ready to serve!
