Chicken Soup Recipe
I am a big believer in being prepared. I really believe that this chicken soup recipe is a must have. There have been so many times in my life where a cold or the flu took me off guard. There's been many more times I just didn't feel like cooking, and I was thankful to be able to pull this great meal out of the freezer and heat. Sometimes it's hard to believe that soup can really be a meal. This Chicken Soup recipe provides you with great taste, and large pieces of chicken meat and vegetables, along with the pasta you choose to use. It's a wonderful meal that will satisfy you and your family. Which is why I strongly recommend you try my Homemade Chicken Soup Recipe. It is the real deal. This is the soup my mother and grandmother made. This is a soup that I don't believe you can buy anywhere, at least I haven't seen it. Not even in some great deli's that I have been in. There are many chicken soup recipes in the world. I can tell you that I have really benefited from this one. Obviously I think this is the best chicken soup recipe I have ever tried. This makes about a gallon and a half of soup. Divide it up into containers, put it in the freezer, and watch your life get easier.
Ingredients
1 Meat Soup Bone1 small whole Chicken Celery Stalk 1 large Onion Large whole Carrot 1 Potato - peeled 3 - 4 whole canned Tomatoes Salt and Pepper Pasta or Rice
Method
Fill large kettle with water.Add Soup Bone. Bring to boil. Remove any foam and particles. Do this for a half-hour. While you do this, soak the Chicken in cold salt water, (See other Chicken recipes) for 20 minutes. *Note: Sometimes I can’t find meat soup bones at the supermarket. When that happens I just skip that step.
Add whole Chicken. Bring to boil. Remove foam and particles. Do this for a half-hour. Move Chicken and Meat every once in a while to make sure they cook evenly.
Wash and peel vegetables. And keep them whole.
Add all vegetables, Salt and Pepper. Add the whole canned Tomatoes.
Cook everything until chicken falls apart.
Remove all vegetables and place on a platter. Throw away the Potato. Cut vegetables into bite sized pieces. Remove all meat and place on another platter. Cut meat into bite sized pieces.
Strain the broth into a new large kettle.
Divide into small portions for future meals by putting the meats and vegetables together in containers, and filling the containers with the broth. When ready to serve, bring to a boil, and add the pasta or rice. You may want to try boiling the pasta in a separate container with water. When cooked, drain, then add to soup.
Options: Parmesan Cheese sprinkled on top of a persons bowl is a nice touch. You can also add peas or fresh escarole to the soup. Do this at the same time you add the rice or pasta. There is nothing better than a bowl of this soup after a hard day’s work. Add a salad, and you have a great meal.
Finish your meal with a salad.
