Ingredients

2 Cups Mashed Bananas

3 Cups Flour

1 Teaspoon Salt

1 Teaspoon Baking Soda

3 Teaspoon Cinnamon

2 Teaspoon Vanilla Click here to make your own Vanilla Extract

1/2 Teaspoon Baking powder

3 Eggs

1 Cup Vegetable Oil

1 1/2 Cups Sugar

1 Cup Nuts or Raisons (optional)

Method

Sift the dry ingredients and set aside. If you don't have a sifter, don't worry. I don't have one either, and my bread always tastes great. So, just take all the dry ingredients, and set aside in a bowl.

Beat the eggs in a large bowl. Add oil and sugar. Cream well. Add the bananas and the vanilla. Stir in the dry ingredients and mix well again.

Add the nuts or raisons, and spoon into 2 well greased loaf pans. Bake at 325 degrees for 1 hour. Test with knife. Put the knife into the center. When you remove it, if it comes out without batter, the bread is done. If the knife has batter on it, let cook another 5 minutes, then test again.

I hope this moist banana bread recipe becomes a staple in your kitchen.
