Zucchini Bread Recipe

There are many Zucchini Bread Recipes in the world. I hope you see that this is a super easy zucchini bread recipe.

With my recipe, you can make modifications. Perhaps you would want to add shredded carrots, or apples. Be creative! I'm providing you with the basics, now you can add what you want; Nuts, raisons, chocolate, carrots, apples, bananas!

Isn't it wonderful?

Ingredients

2 Cups Grated Zucchini

3 Cups Flour

1 Teaspoon Salt

1 Teaspoon Baking Soda

3 Teaspoon Cinnamon

3 Teaspoon Vanillia Click here to make your own Vanilla Extract

1/2 Teaspoon Baking Powder

3 Eggs

1 Cup Vegetable Oil

1 1/2 Cups Sugar

1 Cup chopped Nuts or Raisons (optional)

Method

Sift dry ingredients and set aside. (Do not include sugar)

if you do not have a sifter, don't worry, neither do I. I normally skip that step. Beat eggs in a large bowl. Add oil and sugar. Cream well. Add grated portions plus the vanilla.

Stir in the dry ingredients slowly, and mix well again. Stir in the optional nuts or raisons, then pour into 2 well greased loaf pans.

Bake at 325 degrees for about an hour. Test with a knife. Put the knife into the center of a loaf. When you remove it, if it is basically clear, the bread is done. If it has batter on it, let the bread cook another 5 minutes, then test again.

Take one loaf, and place in your freezer. Take the other loaf, and enjoy!
